Cheese
Ahhh Cheese! Whether from cow, goat, horse, or another milk source, can there be a more perfect food? Brie, Colby, Jack, Munster, Cheddar, Farmers, Romano, stinky Limburger, all bring up memories of the past and hold promises for tomorrow. A food that gets finer with age. Variations and versions abound. To temp the mind and the pallet. From faraway France to places unheard of. All cultures have, or should have, a cheese that sets them apart and makes them known. A food that can, on it's own, be the star of the show. As an ingredient it can make another food better than otherwise. Remember to always make room for more cheese.
